Can anyone explain the difference between these three in how they will make your pet react?

This is how I understand it, @Barugon, but others will correct me if I'm wrong:

Defensive: if you are taking damage, the pet will react and defend you by attacking your attacker
Aggressive: if your pet detects an aggressive foe near you, they will attack that foe immediately
Passive: doesn't react to his surroundings

Most of the time, I'd recommend any summon or pet to be on Aggressive. It makes them react better.

As long as it doesn't lock-on to some distant mob and run off then I'll give it a try.

It might. I just always keep mine on defensive. Try both and see which you prefer.

You can also right click on a target and command it to attack.

I tried aggressive while fighting the dry-dock pirates in Tenebris Harbor and my water elemental was dying too much, so I went back to defensive.

you can also command it to stay close (not moving far from your char) additional to passive/aggresive/defensive

Also if you use a water elemental and you want it for healing set it to passive so it doesn't wander around attacking mobs and getting agro because if it has agro its not to likely to heal you much if at all. At least that is what i find anyway.
