Right at the start when entering the zone the player meets Osterhild and her troup of squires and hears her plea for help.

Osterhild herself confirms that they are not Squires in the sense of being nobility but being poor and in need of her example and guidance to become members of the military.

This leaves them as squires in the sense of Knights in training who already have finished being pages and work for and support a knight until they can become one themselves.

Just that these are not *squires* but simply children in civilian clothing and completely helpless to defend themselves which is why Osterhild can´t leave them alone.

Sure - there are enemies in the area and those might be too much for their small group for one knight and a handful of knight trainess - but they should not be simply unarmed civilians.

For a culture that sounds like the Rohirrim they have very few horses with them.
    - one of the jobs of a squire is taking care of the horse of his knight, so perhaps one of them could hold the line of a horse.
    - one of the jobs of a squire is taking care of the Knights flag / Fähnlein in german which would double as a polearm if necessary and should be upheld with honour by one of them.

It's possibly better to think of these "squires" as closer to boy scouts/girl scouts than actual "dedicated service to a knight" kind of squires. Also, it's possible Osterhild will lose her job (volunteer position?) when they get back home.
