So we need rats and we need bats, but another animal I'd like to see that isn't in classic Ultima, though is in other RPGs, is the wild boar. As Wikipedia states, They would also have a kind of behavior that we currently don't see among other animals in the game: charging attacks, and also in groups, charging in stampedes. They're also good swamp denizens. As well as forest denizens. As well as classic game animals. And besides, we need them for Novian heraldry, too. We can't have them on our shields if they don't exist in the game!
Actually, I didn't remember this -- we did have boars in Serpent Isle, And of course, the Blue Boar Tavern in Britain, and orcs were supposed to have been made with wild boars, though no boars wandering around in Britannia wilds.
Yes to boars! They have pigs so can share the same 'pig carcass' loot and mechanics, but just tougher to kill etc.
