    At first I was like "cheese whiz?" But you know what... that stuff is good on sandwiches, and I've never tried it in mac n' cheese.

    Me too! I was expecting like.. pizza, buffalo wings, tacos/tex-mex .. so hearing cheese whiz, toaster pastries (pop tarts).. and then hearing about the Mac & Cheese .. and when Laz&Jack mentioned truffle oil yesterday.... I simply must try this recipe!

    Sorry...I've been making homemade mac and cheese for over 30 years and it requires real cheese, not cheese whiz. Not saying it doesn't taste good. I like a good frozen pizza, but I don't fool myself it's as good as the real thing.

    That said, live your culinary truth but cheese whiz...I can't even. :)

    The best mac and cheese uses multiple types of cheese. A processed cheese for the sauce base (American or Queso Cheese, never "imitation processed cheese food") added to heated milk, slowly add about a teaspoon to tablespoon of flour until thickened and then the addition of some nice melting cheeses to the sauce for flavor. Finally, add firmly cooked macaroni and the sauce into a baking dish, top with alternating layers of shredded hard cheeses and bread crumbs. Then throw in the oven to brown.

    Season to taste during each stage.

    Good variation:
    Add a yummy fat with tidbits to a base rue before the cheese blending stage (bacon, pork fat, or fatty meat cuttings work good.)
    Add yummy tidbits during the bake stage: cooked sausage, steamed vegetables, precooked bacon, pulled beef, pulled pork, and cooked chicken are good examples. My favorite vegetable for this is broccoli.

    Yes, I keep my recipes loose on everything. I get it from my mother and she from her grandmother. Real homestyle cooking uses what's available.

    If you want to go all out, start with your melting cheese that is best for melting and melt it into milk slowly instead of using a processed cheese for the base. This is a much longer process.

    Now, my usual "quick Mac and Cheese" will skip the topping and just make the sauce. Then I throw the macaroni in the sauce.

    Best types of macaroni for Mac and Cheese (in no particular order):
    Elbow Macaroni, Rigitonni, Rotinni Shells.

    As of if they want to make an in-game recipe:
    Cheese, Milk, Flour (for the pasta and sauce), Bread (for breadcrumbs), Bacon (you gotta have bacon!) and Salt.

    As a note, Cheese Wiz is just American Cheese Sauce.
    At least it is when you don't get the cheap imitation that is mostly oil.
    Still, grated block American Cheese works better and ideally should only be your base.

    I want the obsidian mac and cheese; it lasts two hours longer and you get more xp for making it. It just sucks making jars of oil and pie dough for three hours first.

    I make a mean Mac & Cheese - with all those fancy methods and recipes and then some ... but it's not a "Lord British Mac and Cheesewhiz ™ " ..

    Here's my last Mac and Cheese (from Feb 2013!) that I found a picture of on my phone, while making room just now... and I thought maybe it would inspire.

    Citizens of the USA certainly do like a processed cheese sauce smothering your pasta. Here in Alberta Canada I make mine with grated sharp cheddar in a white sauce, mix into the baking dish, then add bread crumbs to the top with a little additional cheese grated overall (a mix of good sharp cheddar and good full fat mozzarella) . Bake. I got my recipe from my German grandmother.

    Sounds yummy. I do a similar recipe in a crock pot. The grated cheddar really has a great texture for Mac and cheese once it's melted. If you like the flavor of gouda, that works really well too.

    I make enough for a square casserole dish, but this is easily adjusted for size.


    Mac n Cheese


    Ingredients:

    3/4 cup breadcrumbs (I use rye bread or 100% whole wheat or a mix because that's usually what is here,
    but all the breads work as long as they aren't sweetbreads)
    4 cups Macaroni uncooked
    2 Cups grated cheese, divided ( I use sharp cheddar and asiago or gouda)
    5 Tablespooons of salted butter, divided
    3 Tablespoons of flour
    1/2 Teaspoon of white pepper (use black peppercorn if you do not have white,
    there will be flecks of black in the sauce if you use black pepper.
    They don't bother me but some people are squeemish)
    pinch of Cayenne pepper
    1 Tablespoon Dijon mustard, prepared
    2 Cups of milk ( I use 1 % milk because that's what is in my cooler,
    use any milk that is on hand the more fat the better)

    Instructions:

    cook macaroni according to package instructions, and drain. Set aside.

    While cooking pasta:
    Heat oven to 350 F
    In a medium saucepan on medium heat, melt 3 tablespoons of the butter.
    Mix flour, salt, pepper then add the flour mixture to the melted butter in the saucepan on the heat,
    slowly whisking into the melted butter. Cook, stirring for about 3-4 minutes, careful not to burn it.
    It makes a paste. (If under-cooked then your mac and cheese will taste slightly like flour.
    So you will know and be able to adjust the length of time for the next time you make the sauce.)
    Whisk the milk into the paste stirring slowly all the time until the sauce thickens.
    After thickening, add the mustard, and 1 1/2 cup of the grated cheese
    to your white sauce and stir cheese sauce to melt the cheese completely.

    In the casserole dish combine the cooked drained pasta with the cheese sauce.
    Top with 1/2 Cup grated cheese.
    With remaining 2 Tablespoons of melted butter add the breadcrumbs and stir to coat.

    Bake in the oven at 350 F until the breadcrumbs are golden, about 45 minutes

    ** this amount of sauce can stretch to cover far more macaroni but we like it rich and thick with our meal.
