I am looking for a POT that has no or very few restrictions. I don't want to have to place vendors or adhere to other rules.
Crossroads' only law is Wheaton's law. Outside the market square, Crossroads Alleys is the same. If you can't find a spot you like in either, custom placing is possible as well. If you want solitude, Crossroads Estates or Crossroads Landing nearly empty and only have custom placement.
Snug Harbor or Journeys End. Will place lots to accommodate as needed. No Rules Live as you please. Laz
Novia Market has no restrictions. You are welcome to place a home in any empty spot (I may have to change the reservation). And I can place markers so you can have a home just about anywhere that is flat. Let me know if you're interested. There are some spots that have fast travel signs nearby that are still pretty secluded. And also some decent spots where you could set up a vendor in the future.

During the holiday sale I wanted to upgrade a deed but I don´t see an option to go to "Castle, PA, taxfree". The highest I can select are either "Castle, PA, taxed" or "Castle, POT, tax-free". The only Tax Free PA Castle deeds are Founder deeds. You can only upgrade to this via lower level Founder deeds. The highest level non-Founder deed is the "Deed, Castle (POT, Tax Free)"
If you are trying to support the game and get a great convenience when it comes to taxes, tax free deeds are great! But if you're cheap and good at math, just check how many years you'd have to own a tax free to make it worthwhile. For me personally I'm not going anywhere, so I love the tax free deeds! But just wanted to throw that out there for the players just starting out. Don't feel like you need something like that, because it definitely seems like a convenience instead of a money saver for me. Once you decide you are here for good, is when you want to invest in those high end tax free deeds. Don't do it because you want to save gold or money!
Just another option for Segalleon2: Do I remember correctly that POT deeds can also be used in PRTs? That would be the least restrictive of all to use it in.
I think thats a solid suggestion in theory. But you are probably just being silly if you'd rather live in a PRT instead of a POT. Most governors of POTs will work with you and create a spot that can feel unique. That is not possible in a PRT. It's basically the same exact thing as an npc town, but with zero quests and zero added reason to go there. In a player owned town they can move npc vendors near your lot, fast travel signs, decorate all around it etc. There is no benefit whatsoever for a governor to evict you, so the one drawback (the ability to be evicted) is kind of non-existent if you are an active player. I honestly don't see any serious argument why it would be more beneficial for any player to live in a prt over a pot. Please prove me wrong!

I was actually focused on the least restrictions part. I didnt consider any of the benefits you mentioned since all of my lots are in NPC towns.

Jade Valley, Jade Garden, Jade Island, Jade Mountain. Minimal asks, mostly try to fit in with the decor around you. We will move lots to locations that you chose if they are viable and empty.
